Ingredients
- 3 to 4 pounds beef chuck roast
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cups beef broth
- 1 cup dry red wine
- 1 can (14 oz) diced tomatoes
- 1½ cups Arborio rice
- ½ cup grated Parmesan cheese
Instructions
- Pat the beef chuck roast dry and season with salt and pepper.
- In a Dutch oven, heat olive oil over medium-high heat. Sear the roast until browned on all sides; set aside.
- Sauté onions, carrots, and celery in the same pot until softened. Add garlic and cook for another minute.
- Deglaze the pot with red wine; let simmer briefly.
- Return the roast to the pot along with broth, tomatoes, oregano, basil, and bay leaf. Bring to a simmer.
- Cover and transfer to a preheated oven at 300°F (150°C). Cook for 3–4 hours until tender.
- For risotto, keep broth warm in a saucepan. In a skillet, toast Arborio rice in olive oil for a few minutes.
- Gradually add warm broth while stirring until creamy; finish with butter and Parmesan.
