Ingredients
- 12 mozzarella balls
- 12 cheese tortellini
- 24 cherry tomatoes
- 12 fresh basil leaves
- 12 green olives, pitted
- 12 black olives, pitted
- 12 slices salami
- 1/4 cup extra virgin olive oil
- 1 tablespoon white wine vinegar
- Juice of 1/2 lemon
- 1 tablespoon fresh parsley, chopped
- 2 teaspoons fresh oregano, chopped
- 2 cloves garlic, grated
- 1 teaspoon dijon mustard
- 1 teaspoon sea salt
- 1/2 teaspoon coarse black pepper
- 1 pinch red pepper flakes
Instructions
- Cook the cheese tortellini according to package directions. Drain and rinse under cold water until cooled.
- In a mason jar, combine extra virgin olive oil, white wine vinegar, lemon juice, chopped parsley, oregano, grated garlic, dijon mustard, sea salt, black pepper, and red pepper flakes. Shake well.
- In a bowl with a lid, mix the mozzarella balls, cooked tortellini, and cherry tomatoes. Pour the dressing over and let marinate in the refrigerator for at least 2 hours or overnight.
- Assemble skewers by alternating mozzarella balls, basil leaves, tortellini, green olives, black olives, salami slices, and cherry tomatoes.
