  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 cup full-fat coconut milk (canned)
  • 1/4 cup low-sodium soy sauce
  • 1/2 cup creamy peanut butter (natural preferred)
  • Juice of 1 lime
  • Salt and pepper to taste
  • Cooking oil for sautéing

Instructions

  1. Cut the chicken into bite-sized pieces and season with salt and pepper.
  2. Heat a splash of oil in a large skillet over medium heat. Cook the chicken until golden brown and cooked through, about 6-8 minutes. Set aside.
  3. In the same skillet, reduce heat, add garlic, coconut milk, soy sauce, peanut butter, and lime juice. Stir until well combined and heated through.
  4. Return the chicken to the skillet and stir to coat in the sauce. Simmer for a few minutes on low heat.
