  • 6 bone-in chicken thighs (approximately 1.5 lbs)
  • 2 tbsp fresh ginger, grated
  • 1/2 cup sweet chili sauce
  • 1/4 cup low-sodium soy sauce
  • 4 garlic cloves, minced

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Mix soy sauce, ginger, garlic, and sweet chili sauce in a bowl until blended.
  3. Place chicken thighs in a zip-top bag or bowl and pour marinade over them. Seal and refrigerate for at least 30 minutes.
  4. Arrange marinated chicken in the baking dish and bake for 25-30 minutes until cooked through.
  5. Brush additional sweet chili sauce over the thighs during the last five minutes of baking.
