  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 2 cups water
  • 1 cup fresh cilantro
  • 3 tbsp lime juice
  • 3 garlic cloves
  • ½ cup sour cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray. Season chicken breasts with salt and pepper.
  2. In a saucepan, combine rice and water. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until tender.
  3. Place seasoned chicken in the baking dish and bake for 25-30 minutes until cooked through.
  4. While the chicken bakes, blend cilantro, garlic, lime juice, sour cream, salt, and pepper until smooth to make the green sauce.
