  • 1 lb boneless, skinless chicken breast
  • 1/2 cup full-fat coconut milk
  • 1/2 cup panko breadcrumbs
  • 1 tbsp grated fresh ginger
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup sweet chili sauce (for drizzling)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix ground chicken, panko breadcrumbs, ginger, salt, pepper, and half of the coconut milk until combined.
  3. Form the mixture into small meatballs (about 1 inch in diameter) and place them on the baking sheet.
  4. Bake for 20 minutes or until golden brown and cooked through (internal temperature should reach at least 165°F).
  5. While baking, warm the remaining coconut milk with sweet chili sauce in a saucepan over low heat.
  6. Serve meatballs drizzled with the warm sauce.
