  • 2 cups grated carrots (about 4 medium carrots)
  • 16 oz full-fat cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs, at room temperature
  • 1 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup crushed graham crackers
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine crushed graham crackers and melted butter. Press firmly into the bottom of a springform pan.
  3. In a separate bowl, mix grated carrots, sugar, eggs, cinnamon, nutmeg, and flour until well combined. Pour over the crust.
  4. In another bowl, beat softened cream cheese until smooth; gradually add sugar and eggs until fully blended. Pour on top of the carrot cake layer.
  5. Bake for 60-70 minutes or until set but slightly jiggly in the center. Cool completely before removing from the pan.
  6. Refrigerate for at least four hours before serving.
