- 16 oz full-fat cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs, at room temperature
- 1 cup all-purpose flour
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 cup crushed graham crackers
- 1/2 cup unsalted butter, melted
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine crushed graham crackers and melted butter. Press firmly into the bottom of a springform pan.
- In a separate bowl, mix grated carrots, sugar, eggs, cinnamon, nutmeg, and flour until well combined. Pour over the crust.
- In another bowl, beat softened cream cheese until smooth; gradually add sugar and eggs until fully blended. Pour on top of the carrot cake layer.
- Bake for 60-70 minutes or until set but slightly jiggly in the center. Cool completely before removing from the pan.
- Refrigerate for at least four hours before serving.
