  • 2 cups long grain white rice
  • 10.5 oz condensed beef broth
  • 10.5 oz condensed cream of mushroom soup
  • 2 cups diced green peppers
  • 1 cup diced yellow onions
  • 2 cups sliced white mushrooms
  • 3 cups shredded mozzarella and cheddar cheese blend

Instructions

  1. Set the Instant Pot to Saute Less for 7 minutes. Melt butter and brown the ground beef, crumbling it as it cooks.
  2. Add beef broth and water, then season with salt, pepper, onion powder, and garlic powder; stir gently.
  3. Add rice without stirring and push it down to submerge.
  4. Layer cream of mushroom soup on top followed by green peppers, onions, and mushrooms.
  5. Close the lid and set to Pressure Cook High for 7 minutes.
  6. Perform a quick release once cooking is done.
  7. Stir in shredded cheese until melted.
