  • 4 large eggs (room temperature)
  • ¾ cup caster sugar
  • ½ cup strong coffee or espresso (for syrup)
  • ½ cup unsalted butter (softened)
  • 2 cups powdered sugar (for buttercream)
  • 6 oz dark chocolate (for ganache)
  • ½ cup heavy cream (for ganache)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
  2. In a bowl, whisk together almond flour, eggs, and caster sugar until well combined.
  3. Pour the mixture into the prepared pan and bake for 15-20 minutes until golden brown. Allow to cool completely before removing from the pan.
  4. Brew strong coffee or espresso and mix with sugar in a saucepan over medium heat until dissolved. Let cool.
  5. Beat softened unsalted butter until creamy; gradually add powdered sugar and cooled coffee until smooth and fluffy.
  6. Cut the cooled sponge into even layers, soak each layer with coffee syrup, and spread an even layer of coffee buttercream on top.
  7. Melt dark chocolate with heavy cream over low heat until smooth; pour ganache over assembled layers and refrigerate until set.
