  • 4–6 cloves garlic
  • 1-inch piece ginger
  • 400 g chopped tomatoes
  • 500 ml chicken stock
  • 400 ml coconut milk
  • 750 g leg of lamb (diced)
  • Spinach
  • Fresh coriander

Instructions

  2. Simmer the onion mixture on low heat for 15 minutes, then add vegetable oil and cook until golden brown.
  3. Stir in diced lamb and brown for about 8-10 minutes.
  4. Add chopped tomatoes, chicken stock, and spices; bring to a boil, then simmer covered for 45 minutes.
  5. Stir in coconut milk and soy sauce; add spinach and cover for an additional 5 minutes before serving.
