  • 3/41 cup plain Greek yogurt
  • 2 tablespoons yellow mustard
  • 2 tablespoons dijon mustard
  • 23 tablespoons honey
  • 1 teaspoon lemon zest
  • 1/4 cup soy sauce
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons worcestershire sauce
  • 2 teaspoons garlic, minced
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 4 cups romaine lettuce, chopped
  • 1 cup gorgonzola cheese, crumbled
  • 1 cup slivered almonds
  • 1 cup bacon, crumbled
  • 1 1/2 cups blueberries
  • 1/2 cup dried cranberries or cherries

Instructions

  1. In a mason jar or bowl, whisk together Greek yogurt, yellow mustard, dijon mustard, honey, lemon zest, salt, and pepper to create the dressing. Shake or stir until well combined.
  2. For the chicken marinade, mix soy sauce, olive oil, worcestershire sauce, minced garlic, lemon juice and zest, salt, and pepper in a bowl. Pour over chicken in an airtight container and marinate for at least 30 minutes.
  3. Preheat the grill to medium heat (about 400°F). Grill the marinated chicken for about 4-5 minutes per side until cooked through (internal temperature should reach 160°F). Let rest before slicing.
  4. In serving bowls, layer chopped romaine lettuce and top with sliced chicken, bacon bits, gorgonzola cheese, almonds, and blueberries. Drizzle with honey mustard dressing before serving.
