  • 240g drained cooked chickpeas
  • 300g Greek yogurt
  • 150g feta cheese
  • 2 tablespoons honey
  • 2 tablespoons rose harissa paste
  • Juice of 1 lemon
  • Olive oil
  • Salt
  • Black pepper
  • Cinnamon

Instructions

  1. Preheat the oven to 190°C (375°F).
  2. Trim and toss carrots in olive oil, cinnamon, salt, and pepper on a roasting tray. Roast for 30 minutes until tender.
  3. Finely chop carrot tops and mix with lemon juice and olive oil to create a chunky green sauce.
  4. In a bowl, whisk Greek yogurt and crumbled feta until smooth; season to taste.
  5. Add drained chickpeas to the roasting tray and cook for an additional 15 minutes.
  6. Combine honey and harissa paste in a bowl, then coat the roasted carrots and chickpeas.
  7. Serve the whipped feta on a plate topped with the carrot-chickpea mixture and drizzle with carrot top oil.
