- 1 lb boneless skinless chicken breasts
- 1/2 cup chopped onions
- 2 cups diced carrots
- 1 cup diced celery
- 3 minced garlic cloves
- 7–8 cups chicken broth
- 6–7 oz egg noodles
- Fresh lemon juice (to taste)
- Seasonings: salt, pepper, thyme, bay leaf
Instructions
- Prepare all ingredients by chopping vegetables into uniform sizes.
- In a large pot over medium heat, add enough chicken broth to cover the base. Place chicken breasts in the pot and pour in more broth until they're submerged. Bring to a boil, then reduce heat and simmer for about 20 minutes until cooked through.
- Remove chicken from the pot; set aside to shred or cube. Sauté onions, carrots, celery, and garlic in the same pot until softened (5-7 minutes).
- Return shredded chicken to the pot along with additional broth, bay leaf, thyme, salt, and pepper; bring back to a boil.
- Add egg noodles; reduce heat and cook until tender (10 minutes). Stir in fresh lemon juice before serving.
