  • 1 lb boneless skinless chicken breasts
  • 1/2 cup chopped onions
  • 2 cups diced carrots
  • 1 cup diced celery
  • 3 minced garlic cloves
  • 78 cups chicken broth
  • 67 oz egg noodles
  • Fresh lemon juice (to taste)
  • Seasonings: salt, pepper, thyme, bay leaf

Instructions

  1. Prepare all ingredients by chopping vegetables into uniform sizes.
  2. In a large pot over medium heat, add enough chicken broth to cover the base. Place chicken breasts in the pot and pour in more broth until they're submerged. Bring to a boil, then reduce heat and simmer for about 20 minutes until cooked through.
  3. Remove chicken from the pot; set aside to shred or cube. Sauté onions, carrots, celery, and garlic in the same pot until softened (5-7 minutes).
  4. Return shredded chicken to the pot along with additional broth, bay leaf, thyme, salt, and pepper; bring back to a boil.
  5. Add egg noodles; reduce heat and cook until tender (10 minutes). Stir in fresh lemon juice before serving.
