  • 2 pounds russet or Yukon Gold potatoes
  • 1/4 cup unsalted butter
  • 1/2 cup milk or cream
  • 1 pound ground lamb or beef
  • 1 medium onion
  • 2 cloves garlic
  • 2 medium carrots
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • Tomato paste
  • Worcestershire sauce
  • Thyme
  • Smoked paprika

Instructions

  1. Boil potatoes in salted water until fork-tender (15-20 minutes). Drain well.
  2. Mash potatoes with butter and milk until smooth; season with salt and pepper.
  3. In a skillet, sauté onions and garlic in olive oil until soft. Add ground meat and cook until browned.
  4. Stir in diced carrots, peas, corn, tomato paste, Worcestershire sauce, thyme, smoked paprika, salt, pepper, and stock; simmer for 10 minutes.
  5. Preheat oven to 400°F (200°C). Layer the meat filling in a baking dish and top with mashed potatoes.
  6. Bake for 25-30 minutes or until golden brown on top.
