Ingredients
- 2 pounds russet or Yukon Gold potatoes
- 1/4 cup unsalted butter
- 1/2 cup milk or cream
- 1 pound ground lamb or beef
- 1 medium onion
- 2 cloves garlic
- 2 medium carrots
- 1/2 cup frozen peas
- 1/2 cup frozen corn
- Tomato paste
- Worcestershire sauce
- Thyme
- Smoked paprika
Instructions
- Boil potatoes in salted water until fork-tender (15-20 minutes). Drain well.
- Mash potatoes with butter and milk until smooth; season with salt and pepper.
- In a skillet, sauté onions and garlic in olive oil until soft. Add ground meat and cook until browned.
- Stir in diced carrots, peas, corn, tomato paste, Worcestershire sauce, thyme, smoked paprika, salt, pepper, and stock; simmer for 10 minutes.
