  • 2 cups bread flour
  • 2 cups all-purpose flour
  • 2 tsp salt
  • 6 tbsp olive oil, divided
  • 1 jar raspberry preserves
  • 2 cups confectioners' sugar
  • 24 tbsp whole milk

Instructions

  1. In a mixing bowl, combine warm water and sugar; stir until dissolved. Sprinkle yeast over the top and let sit until frothy (5-10 minutes).
  2. In another bowl, whisk together bread flour, all-purpose flour, and salt. Add the yeast mixture and 4 tbsp olive oil; mix until a dough forms.
  3. Knead on a floured surface for 8-10 minutes until smooth. Place in a greased bowl, cover with a towel, and let rise for about an hour until doubled in size.
  4. Preheat your oven to 375°F (190°C). Punch down the risen dough and spread it onto a greased baking sheet; create dimples with your fingers.
  5. Spoon raspberry preserves into the dimples and drizzle with remaining olive oil.
  6. Bake for about 18 minutes or until golden brown. Cool slightly before glazing.
  7. Mix confectioners' sugar with whole milk to achieve desired consistency; drizzle over cooled focaccia before serving.
