  • 1 whole chicken (divided into 8 pieces) or 4 skin-on chicken breasts
  • 3 tbsp salted butter
  • 1 cup brown mushrooms (halved)
  • 3 shallots (diced)
  • 3 cloves garlic (minced)
  • 1/2 cup dry white wine
  • 2 cups chicken stock
  • 1/4 cup cream
  • Fresh herbs (sage and parsley)

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Pat chicken dry; season with salt and pepper.
  3. Brown chicken in a Dutch oven with melted butter over medium-high heat; remove and set aside.
  4. Sauté mushrooms, shallots, celery, and garlic in the same pot until tender; add herbs.
  5. Sprinkle flour and deglaze with white wine; stir in chicken stock until thickened.
  6. Add halved potatoes and browned chicken back to the pot; cover and roast for 40-45 minutes until chicken reaches an internal temperature of 165°F (74°C).
  7. Let rest for 10 minutes before serving.
