- 1 large egg
- 1 tsp vanilla extract
- ½ cup pure maple syrup
- 1 cup grated zucchini
Instructions
- In a bowl, whisk together oats, flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mix melted coconut oil or butter, egg, vanilla extract, and maple syrup until combined.
- Gradually add the dry mixture to the wet ingredients while stirring until just combined. Fold in the grated zucchini. Chill dough for 30 minutes.
- Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
- Drop rounded scoops of dough onto the prepared sheet and flatten slightly.
- Bake for 11-14 minutes until golden brown around edges. Cool on a wire rack.
