Ingredients
- 2 pounds red-skinned potatoes
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 tablespoon Dijon mustard
- Juice and zest of 1 lemon
- Fresh parsley, thyme, dill
- Sliced red onion
- Chopped scallions
Instructions
- Cook the potatoes in boiling water until fork-tender (about 10-12 minutes). Drain and cool.
- Once cooled, slice the potatoes in half.
- In a small bowl, whisk together olive oil, vinegar, mustard, lemon juice and zest, herbs, salt, and pepper.
- In a large bowl, combine sliced potatoes with red onion and scallions. Pour dressing over and toss gently.
