- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- 1/2 cup coconut sugar (or brown sugar)
- 2 eggs (at room temperature)
- 1 1/2 cups chopped pecans
Instructions
- Preheat the oven to 350°F and line a 9×9-inch baking pan with parchment paper.
- In a large bowl, mix almond flour, melted coconut oil, and maple syrup until well combined. Press the mixture into the prepared pan to form the crust. Bake for about 10 minutes or until golden brown.
- In another bowl, whisk together coconut sugar, melted coconut oil, maple syrup, eggs, and vanilla extract (if using). Fold in chopped pecans.
- Pour the filling over the baked crust and return to the oven for an additional 20-25 minutes until set.
- Allow to cool for at least 30 minutes before chilling in the fridge for one hour. Cut into squares and serve.
