- 300g/10oz cherry tomatoes
- 200g/7oz asparagus
- 2 cups uncooked orzo pasta (400g)
- 100g/3.5oz baby spinach
- Fresh basil and chives for flavor
Instructions
- Preheat oven to 200°C (400°F).
- In a mixing bowl, combine cherry tomatoes and asparagus with olive oil, salt, and pepper.
- Place feta in a baking dish and surround it with the veggies. Bake for about 20 minutes until golden.
- Boil orzo according to package instructions; drain and set aside.
- Mix baked feta and veggies with cooked orzo, baby spinach, basil, chives, and mascarpone until combined.
