Ingredients
- 600g boneless skinless chicken thighs
- 3 tablespoons soy sauce
- 3 tablespoons maple syrup
- 640g cooked jasmine rice
- 200g fresh pineapple, diced
- 1 cup cooked edamame beans
- 4 tablespoons light mayo
- 2 teaspoons sriracha
- 1–2 tablespoon of water
- 2 teaspoons of grated garlic
- 2 teaspoons of grated ginger
- 1 teaspoon of onion powder
- 1 tablespoon of shaoxing wine
- 1 tablespoon of tomato paste (puree)
- 100ml of pineapple juice (from a carton)
- 2 teaspoons of sesame oil
- small red onion, halved and sliced thinly
- 1 carrot, julienned
- 140g of avocado, diced
- 3 spring onions, sliced (green part only)
- 2 baby cucumbers, halved and sliced
- 1 teaspoon of toasted sesame seeds
Instructions
- Prepare spicy mayo by mixing light mayo and sriracha; adjust water for drizzling consistency.
- Whisk together soy sauce, maple syrup, Shaoxing wine, pineapple juice, tomato paste, sesame oil, and sriracha to create marinade.
- Cook chicken in a non-stick frying pan with garlic, ginger, and onion powder until golden brown.
- Add marinade to the pan and cook until chicken is caramelized.
- Assemble bowls with rice as the base and top with chicken and assorted fresh toppings: cucumber, pineapple, avocado, red onion, carrot, edamame beans, and green onions.
- Drizzle spicy mayo before serving.
