Ingredients
- 600g boneless skinless chicken thighs
- 640g cooked jasmine rice
- 200g diced fresh pineapple
- 155g cooked edamame beans
- 140g diced avocado
- 2 teaspoons sriracha (for spicy mayo)
- various fresh veggies (carrot, cucumber, red onion)
Instructions
- Prepare the spicy mayo by mixing light mayonnaise with sriracha and water to desired consistency.
- Create the marinade by whisking soy sauce, maple syrup, Shaoxing wine, pineapple juice, tomato paste, sesame oil, and sriracha in a bowl.
- Cook diced chicken in a heated frying pan with garlic, ginger, and onion powder until golden brown.
- Pour the marinade into the pan and add the cooked chicken back in. Cook until the sauce thickens.
