  • 3 sticks celery (chopped)
  • 4 cloves garlic (minced)
  • 2 Russet potatoes (peeled & diced)
  • 4 medium carrots (peeled & sliced)
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon olive oil
  • 1 (6 ounce) can tomato paste
  • 3 tablespoons flour
  • 1/2 teaspoon Italian seasoning
  • 1 cup frozen peas (optional)
  • Salt & pepper (to taste)

Instructions

  1. Heat olive oil in a large soup pot over medium-high heat. Sauté onion and celery for 5-7 minutes until softened.
  2. Add minced garlic and cook for an additional 30 seconds.
  3. Add ground beef and brown for about 8 minutes while breaking it up with a spoon.
  4. Stir in flour and cook for another 1-2 minutes.
  5. Mix in tomato paste until well combined.
  6. Pour in beef broth, Worcestershire sauce, potatoes, and carrots; bring to a boil.
  7. Reduce heat to simmer, cover partially, and cook for at least 30 minutes until veggies are tender.
  8. Stir in optional frozen peas and season with salt and pepper before serving.
