  • 1/2 small yellow or red onion (diced)
  • 2 cloves minced garlic
  • 3 teaspoons chili powder
  • 1 tablespoon honey or agave
  • 8 flour or corn tortillas
  • 1 cup thinly sliced red onion
  • 2 tablespoons lime juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon kosher salt
  • 1 teaspoon sugar

Instructions

  1. Prepare the pickled onions by combining all ingredients in a medium bowl or glass jar and letting them sit at room temperature.
  2. In a large skillet over medium heat, sauté diced onions in olive oil until translucent. Add minced garlic and cook until fragrant.
  3. Push the onion mixture to one side of the skillet and add ground pork to the empty space. Cook until no pink remains.
  4. Allow the pork to crisp up for a few minutes without stirring.
  5. Stir in chili powder, cumin, salt, garlic powder, onion powder, paprika, oregano, honey/agave, and lime juice until well combined.
