Ingredients
- 4 ripe peaches or nectarines
- ⅓ cup chopped tomatoes
- 6–8 cups mixed greens
- 1 ball burrata cheese
- ¼ cup olive oil
- 1 Tbsp red wine vinegar
- 1 tsp honey (plus more for drizzling)
- Fresh herbs: basil, dill, oregano
- ¼ cup chopped pistachios
Instructions
- Preheat the grill to medium heat. Halve the peaches, remove pits, and brush with olive oil; season with salt and pepper.
- Place the peaches cut-side down on the grill for 2-3 minutes until grill marks appear. Remove and drizzle with honey.
- In a bowl, whisk together olive oil, vinegar, honey, lemon zest, lemon juice, and minced garlic. Stir in chopped herbs.
- Slice grilled peaches into wedges. In a serving dish, layer mixed greens with sliced peaches and tomatoes. Tear burrata over the top and drizzle vinaigrette.
