  • 12 tablespoons sriracha (depending on your heat tolerance)
  • 1 teaspoon sesame oil
  • 1 teaspoon low sodium soy sauce

Instructions

  1. Prepare Pickled Cucumbers: Combine rice vinegar, salt, sugar, ice, and water in a bowl; add sliced cucumbers and let sit.
  2. Marinate Chicken: Whisk together sesame oil, garlic, ginger, soy sauce, gochujang, brown sugar, honey, and rice vinegar; coat chicken thighs in marinade and refrigerate for at least 30 minutes.
