  • 1.5 cups cherry tomatoes
  • 1/3 cup chopped pecans
  • 4 hard-boiled eggs
  • 1 ripe avocado
  • 2 garlic cloves
  • 1 small sweet onion
  • 4 tablespoons extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • Juice of half a lemon
  • Sea salt and pepper to taste

Instructions

  1. Preheat a grill pan on medium-high heat. Rub chicken fillets with salt, pepper, and oil, then grill for about 5 minutes per side until cooked through. Let rest before slicing.
  2. In a skillet, heat oil over medium-high heat. Sauté garlic and onions until golden brown (about 6 minutes). Blend with remaining dressing ingredients until smooth; refrigerate.
  3. In a large bowl, layer mixed lettuce, sliced chicken, corn, tomatoes, chopped eggs, pecans, and diced avocado.
