  • 6 large yellow or sweet onions
  • 1 lb ground beef (or lamb)
  • 1/2 cup long-grain rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 can crushed tomatoes (14 oz)
  • Beef or vegetable broth
  • Fresh herbs (mint, dill, oregano)

Instructions

  1. Boil salted water in a large pot. Prepare onions by trimming bases and boiling for 10–12 minutes until soft. Cool and peel into cups.
  2. In a skillet, sauté chopped onion and garlic in olive oil until translucent. Add ground beef and cook until browned. Stir in rice, herbs, spices, salt, and pepper.
  3. Fill each onion cup with the meat-rice mixture and place them seam-side down in a greased casserole dish.
  4. For the sauce, heat olive oil in a saucepan; add garlic and cook until fragrant. Stir in crushed tomatoes, broth, herbs, and lemon juice; simmer for 5–7 minutes.
  5. Pour sauce over the stuffed onions and bake covered at 375°F (190°C) for about 45 minutes; remove foil and bake another 20–30 minutes until golden.
