  • 1 cup Greek yogurt
  • 1 1/3 cups sugar (divided)
  • 3 eggs
  • 2 teaspoons grapefruit zest
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup vegetable oil
  • 1/3 cup freshly squeezed grapefruit juice
  • 1/2 cup powdered sugar
  • 12 tablespoons freshly squeezed grapefruit juice

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a loaf pan with baking spray.
  2. In one bowl, whisk together flour, baking powder, and salt. In another bowl, combine Greek yogurt, 1 cup sugar, eggs, grapefruit zest, and vanilla extract until smooth.
  3. Gradually mix the dry ingredients into the wet mixture until just combined. Gently fold in vegetable oil.
  4. Pour batter into the prepared loaf pan and bake for about 50 minutes or until a toothpick comes out clean.
  5. For the syrup, heat remaining grapefruit juice with remaining sugar until clear. Pour over the warm cake after cooling for 10 minutes in the pan.
  6. Allow cake to cool completely before glazing with powdered sugar mixed with grapefruit juice.
