- 1 1/3 cups sugar (divided)
- 3 eggs
- 2 teaspoons grapefruit zest
- 1/2 teaspoon pure vanilla extract
- 1/2 cup vegetable oil
- 1/3 cup freshly squeezed grapefruit juice
- 1/2 cup powdered sugar
- 1–2 tablespoons freshly squeezed grapefruit juice
Instructions
- Preheat oven to 350°F (175°C) and prepare a loaf pan with baking spray.
- In one bowl, whisk together flour, baking powder, and salt. In another bowl, combine Greek yogurt, 1 cup sugar, eggs, grapefruit zest, and vanilla extract until smooth.
- Gradually mix the dry ingredients into the wet mixture until just combined. Gently fold in vegetable oil.
- Pour batter into the prepared loaf pan and bake for about 50 minutes or until a toothpick comes out clean.
- For the syrup, heat remaining grapefruit juice with remaining sugar until clear. Pour over the warm cake after cooling for 10 minutes in the pan.
- Allow cake to cool completely before glazing with powdered sugar mixed with grapefruit juice.
