  • 1 cup plain yogurt
  • 4 cloves fresh garlic, minced
  • 1 tablespoon ginger root, finely chopped
  • 1 can (14 oz) crushed tomatoes
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tablespoons tikka masala spice mix
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • Salt to taste

Instructions

  1. 1. Marinate the chicken: In a bowl, mix yogurt, garlic, ginger, and half of the tikka masala spice mix. Add cubed chicken and coat well. Cover and refrigerate for at least 30 minutes.
  2. 2. Prepare the sauce: Heat oil in a skillet over medium heat. Sauté chopped onions until golden brown. Stir in the remaining tikka masala spice mix and crushed tomatoes; let simmer for five minutes.
  3. 3. Incorporate coconut milk: Slowly add coconut milk to the sauce and let it simmer on low heat for another ten minutes.
  4. 4. Cook chicken: Add marinated chicken (with marinade) into the skillet. Cook on medium heat for about ten minutes until cooked through.
