- 1/2 cup granulated sugar
- 1 whole egg + 1 egg yolk
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 3 cups old-fashioned rolled oats
- 1 tsp baking soda
- 1 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together sugars, melted butter, heavy cream, vanilla, and egg yolks until smooth.
- In another bowl, combine flour, oats, baking soda, and salt. Gradually add to the wet mixture until just combined.
- In a separate bowl, beat room temperature butter for the filling until creamy. Add sugars and mix until fluffy. Incorporate eggs and vanilla.
- Drop spoonfuls of dough onto the prepared baking sheet and create an indentation in each ball. Fill with crack pie filling.
- Bake for about 12 minutes or until edges are golden brown.
