  • 500 g fresh gnocchi
  • 150 g diced chorizo
  • 1 small onion, finely diced
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • 200 ml full-fat coconut milk
  • 1.5 tbsp harissa paste
  • 60 g baby spinach

Instructions

  1. Heat sunflower oil in a large frying pan over medium-high heat.
  2. Add diced chorizo and cook for 3-4 minutes until crispy; then set aside.
  3. In the same pan, sauté onion, bell pepper, garlic, salt, and pepper for about 5 minutes until softened.
  4. Stir in harissa paste and tomato puree; combine well.
  5. Pour in coconut milk and add halved cherry tomatoes; simmer for about 5 minutes.
  6. Boil water in a large pot; add gnocchi and cook until they float (2-4 minutes).
  7. Using a slotted spoon, transfer cooked gnocchi to the sauce mixture.
  8. Add back chorizo and stir in spinach; cook for another 1-2 minutes until spinach wilts.
  9. Serve topped with chili flakes, black pepper, and freshly chopped parsley.
