Ingredients
- 500 g fresh gnocchi
- 150 g diced chorizo
- 1 small onion, finely diced
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- 200 ml full-fat coconut milk
- 1.5 tbsp harissa paste
- 60 g baby spinach
Instructions
- Heat sunflower oil in a large frying pan over medium-high heat.
- Add diced chorizo and cook for 3-4 minutes until crispy; then set aside.
- In the same pan, sauté onion, bell pepper, garlic, salt, and pepper for about 5 minutes until softened.
- Stir in harissa paste and tomato puree; combine well.
- Pour in coconut milk and add halved cherry tomatoes; simmer for about 5 minutes.
- Boil water in a large pot; add gnocchi and cook until they float (2-4 minutes).
- Using a slotted spoon, transfer cooked gnocchi to the sauce mixture.
- Add back chorizo and stir in spinach; cook for another 1-2 minutes until spinach wilts.
- Serve topped with chili flakes, black pepper, and freshly chopped parsley.
