Ingredients
- 8 skin-on, bone-in chicken thighs
- 6 tablespoons softened butter
- 2 cloves garlic (chopped)
- 1/2 cup fresh basil (chopped)
- 1/2 cup grated parmesan cheese
- 1 bunch asparagus
- Zest from 2 lemons
- 1 inch lemon (cut into 1/2 slices and seeded)
- 1/2 cup + 1 tablespoon extra-virgin olive oil
- 1/3 cup fresh parsley (chopped)
- 1/3 cup fresh oregano (chopped)
- 1/3 cup fresh basil (chopped)
- 2 cloves garlic (chopped)
- 1 anchovy fillet
- 1 tablespoon chopped drained capers
- 1 teaspoon kosher salt
- 1/3 cup olive oil + 2 tablespoons olive oil
- 1 tablespoon each (dried thyme, parsley + oregano)
- 1 teaspoon crushed red pepper flakes
- salt (to taste)
Instructions
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, combine softened butter, chopped garlic, basil, parmesan cheese, olive oil, lemon zest, dried herbs, red pepper flakes, and salt.
- Coat each chicken thigh generously with the garlic butter mixture.
- Place thighs in a cast iron skillet and roast for about 30 minutes until golden brown.
- During the last 10 minutes of roasting, add asparagus drizzled with olive oil and salt to the baking sheet.
- To make the charred lemon salsa verde, mix charred lemon slices with olive oil and chopped herbs in a small bowl.
