  • 4 Tbsp butter (room temperature)
  • 2 Tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 tsp paprika
  • 1/4 tsp salt
  • 2 Tbsp finely chopped parsley
  • 1 lb. cod (4 filets)
  • 1 fresh lemon

Instructions

  1. Preheat the oven to 400ºF (200ºC).
  2. In a small bowl, mix together butter, olive oil, minced garlic, paprika, salt, and parsley until well combined.
  3. Place cod fillets in a baking dish and coat each filet generously with the garlic butter mixture.
  4. Slice half of the lemon into rounds and place on top of the fish; cut the remaining half into wedges for serving.
  5. Bake for 15-20 minutes until the fish flakes easily with a fork and reaches an internal temperature of 145ºF (63ºC).
