  • 2 lbs lamb rib chops (8 count)
  • 5 garlic cloves (pressed)
  • 4 Tbsp olive oil
  • 2 Tbsp fresh parsley
  • 2 tsp Tabasco sauce
  • 1 tsp fine sea salt
  • 1 tsp black pepper
  • 1/4 tsp dried thyme
  • 1/2 cup chicken or beef stock
  • 2 Tbsp unsalted butter

Instructions

  1. Pat lamb chops dry and mix garlic, olive oil, parsley, Tabasco sauce, salt, pepper, and thyme in a small bowl. Rub over the chops.
  2. Heat 2 tablespoons of olive oil in a cast iron skillet over medium-high heat. Sear lamb chops for 3–4 minutes on each side until browned.
  3. Remove the chops and add stock to the skillet, scraping up brown bits. Stir in butter until melted; simmer for 1–2 minutes.
  4. Plate the lamb chops, drizzle with pan sauce, garnish with parsley, and serve warm.
