  • ¼ cup grated parmesan cheese
  • 1 cup grated mozzarella cheese
  • 1½ cups chicken, beef, or vegetable stock
  • ⅓ cup cream

Instructions

  1. Caramelize the onions: In a large oven-safe skillet, melt butter over medium heat. Add sliced onions and season with salt, pepper, and thyme. Cook for about 30 minutes until golden brown. Stir in minced garlic and set aside.
  2. Prepare the pasta: Boil salted water and cook pasta shells according to package instructions until al dente. Drain and cool.

  4. Mix filling: In a bowl, combine ricotta, egg, gruyere, parmesan, salt, pepper, and half the caramelized onions.
  5. Fill each shell with the ricotta mixture.
  6. Make the sauce: In the skillet with remaining onions, whisk in flour then gradually add stock. Cook until thickened; stir in cream.
  7. Assemble: Place stuffed shells in sauce, top with mozzarella and breadcrumbs.
  8. Bake for 20 to 25 minutes until bubbly and golden.
