  • 2½ tablespoons salted butter
  • 24 ounces store-bought gnocchi
  • 2 pounds yellow onions (sliced)
  • 1½ tablespoons fresh thyme (chopped)
  • 6 cloves garlic (minced)
  • ½ cup dry white wine
  • 2½ cups low-sodium beef stock
  • 1½ cups Gruyère cheese (grated)
  • ½ cup Parmesan cheese (grated)

Instructions

  1. In a heavy-bottomed skillet, heat olive oil and butter over medium heat. Add sliced onions and caramelize for 45-60 minutes, stirring occasionally.
  2. Stir in thyme and garlic; cook for another two minutes until fragrant.
  3. Deglaze the skillet with white wine and reduce by half.
  4. Add flour, then mix in beef stock and bay leaf; simmer for 6-7 minutes.
  5. Cook gnocchi in boiling salted water until they float; drain and add to the sauce.
  6. Top with grated cheeses, broil until melted (3-5 minutes).
  7. Serve warm, garnished with fresh thyme.
