  • 225g (1 1/2 cup) all-purpose flour
  • 20g (2 tbsp) unsweetened cocoa powder
  • 50g (1/2 cup) icing sugar
  • 120g (1/2 cup) cold unsalted butter
  • 1 egg (room temperature)
  • 250g (9 oz) dark chocolate
  • 250ml (1 cup) heavy cream

Instructions

  1. To prepare the crust, mix flour, cocoa powder, icing sugar, and salt in a bowl. Cut in cold butter until crumbly. Stir in the egg until combined. Roll out the dough and fit it into a tart pan.
  2. Preheat your oven to 180°C (350°F). Prick the crust with a fork and bake for about 20 minutes until set. Allow it to cool completely.
  3. For the ganache, chop dark chocolate and place it in a bowl. Heat heavy cream until simmering and pour over the chocolate. Let sit for 5 minutes before stirring until smooth.
  4. Pour ganache into the cooled crust and refrigerate for at least 4 hours until set.
