Ingredients

  • 50 g egg whites, room temperature
  • 40 g granulated sugar
  • ⅛ tsp cream of tartar
  • 60 g almond flour, sifted
  • 45 g powdered sugar, sifted
  • 5 g cocoa powder, sifted
  • 113 g milk chocolate
  • 37 g nutella
  • 50 g heavy cream
  • 2 tbsp butter
  • ½ tsp hazelnut extract (optional)
  • 37 g chopped hazelnuts, toasted
  • 42 g milk chocolate, melted
  • 2 Ferrero rocher balls, chopped
  • 12 1.5 inch sheets edible gold leaf (optional)

Instructions

  1. Preheat your oven to 300°F (150°C) and line an AirBake insulated baking pan with parchment paper.
  2. In one bowl, mix sifted almond flour, powdered sugar, cocoa powder, and optional brown food coloring.
  3. In another bowl, whip egg whites until foamy; add cream of tartar and gradually incorporate granulated sugar until stiff peaks form.
  4. Gently fold the dry ingredients into the whipped egg whites until just combined.
  5. Transfer the batter to a piping bag and pipe small circles onto the prepared baking sheet, leaving space in between.
  6. Bake for approximately 20 minutes or until macarons have risen and formed feet.
  7. Meanwhile, heat heavy cream in a saucepan until just boiling; pour over chopped milk chocolate. Wait for a minute before stirring until smooth, then mix in Nutella and butter.
  8. Once shells are cool, pair them up by size, fill half with ganache, top with crushed Ferrero Rocher pieces, and cap with another shell.
