  • 1/2 cup pomegranate juice
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • 2 tbsp unsalted butter
  • 1 tbsp cornstarch + 3 tbsp warm water

Instructions

  1. In a mixing bowl, combine crushed garlic, thyme, olive oil, salt, pepper, garlic powder, and parsley. Rub the mixture over the lamb chops.
  2. Let the marinated chops sit at room temperature for 30 minutes.
  3. Heat a cast iron skillet over medium-high heat and sear each side of the lamb chops for 4-5 minutes until browned.
  4. Use a meat thermometer to check doneness (145°F for medium-rare).
  5. In a saucepan, simmer pomegranate juice and melt in butter. Thicken with cornstarch mixed with warm water.
  6. Drizzle the sauce over the lamb before serving.
