  • 1 lb lean ground turkey
  • 1 medium onion, chopped
  • 1/2 tablespoon minced garlic
  • 2 tablespoons taco seasoning
  • 1 cup corn
  • 1 cup canned black beans
  • 2 cups salsa
  • 1 cup cooked brown rice
  • 1 cup shredded cheese

Instructions

  2. Halve each bell pepper, remove seeds, and place in the baking dish. Season with salt and pepper; bake for 15 minutes.
