  • 5 cups cubed sweet potatoes
  • 3 garlic cloves
  • 1 pound turkey sausage
  • 10 eggs
  • 1/2 cup milk (plant-based milk can be substituted)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup grated mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a cast iron skillet, heat avocado oil over medium heat. Sauté chopped onion and green bell pepper until softened (about 5 minutes).
  3. Add turkey sausage and cook until browned (7-10 minutes).
  4. Stir in sweet potatoes and minced garlic; cook until sweet potatoes soften (5-7 minutes).
  5. In a mixing bowl, whisk together eggs, milk, thyme, salt, and pepper.
  6. Pour the egg mixture over the sautéed ingredients in the skillet; stir gently.
  7. Top with grated mozzarella cheese and transfer to the oven. Bake for 30-40 minutes or until set.
