Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • 2 cups fresh corn (or frozen)
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 medium onion
  • 3 garlic cloves
  • 2 teaspoons cumin powder
  • 1 tablespoon chili powder
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients: Dice onion, mince garlic, and cut corn off the cob if using fresh corn.
  2. Cook chicken: In a large pot over medium heat, add olive oil. Season chicken with salt and pepper, then cook until browned on both sides (approximately 5 minutes per side). Remove from pot.
  3. Sauté aromatics: In the same pot, add more oil if needed; sauté onion until translucent (about 5 minutes), then add garlic until fragrant (about 1 minute).
  4. Combine ingredients: Return chicken to the pot along with corn, diced tomatoes (with juices), cumin, and chili powder; stir well.
  5. Simmer: Add enough water or broth to cover ingredients (around 2 cups). Bring to a gentle boil, then reduce heat and simmer for at least 20 minutes.
  6. Shred chicken: Remove cooked chicken from pot, shred it using two forks, and return it back into the chili before serving.
