  • 3–4 lbs beef chuck roast
  • 1 large onion, sliced
  • 4 garlic cloves, minced
  • 1 tsp dried thyme
  • 4 cups beef broth
  • Hoagie rolls
  • Sliced provolone or Swiss cheese (optional)

Instructions

  1. Season the beef chuck roast generously with salt and pepper.
  2. Sear the roast in a hot skillet until browned on all sides.
  3. Transfer the roast to the slow cooker and add onions, garlic, thyme, and enough beef broth to cover two-thirds of the meat.
  4. Cover and cook on low for about 7 hours or until fork-tender.
  5. Shred the beef using two forks and return it to the pot with juices.
  6. Spoon shredded beef onto hoagie rolls; add cheese if desired. Serve warm with reserved broth for dipping.
