  • 12–14 small mushrooms (sliced)
  • 1 large shallot (finely chopped)
  • 3–4 garlic cloves (minced)
  • 1 cup arborio rice
  • 1 cup dry white wine
  • 4 cups vegetable stock
  • 16–20 large scallops
  • High smoke point cooking oil
  • Fresh herbs (optional for garnish)

Instructions

  1. Melt half the butter in a saucepan over medium heat. Add shallots, sauté until translucent, then add garlic and mushrooms; cook until softened.
  2. Stir in arborio rice and toast lightly for two minutes. Add white wine and simmer until absorbed.
  3. Gradually add warmed vegetable stock while stirring continuously for about 20-25 minutes until creamy.
  4. Meanwhile, heat oil in a skillet over high heat, season scallops with salt, and sear for 2-3 minutes per side until golden brown.
  5. In the same skillet, melt remaining butter with capers, lemon zest, juice, dill, and parsley; stir well for one minute.
  6. Serve risotto topped with scallops and drizzle with caper-lemon sauce.
