  • 16 oz cooked salmon (or canned)
  • 2 large eggs
  • ½ cup chopped onion
  • ⅔ cup almond flour
  • ¼ cup chopped parsley
  • 2 cloves garlic
  • 2 tbsp fresh lemon juice
  • ¼ cup mayonnaise
  • ½ cup plain Greek yogurt
  • 1 tbsp fresh lemon juice
  • 1 clove garlic (chopped)
  • 1 tbsp freshly chopped parsley (plus more for garnish)
  • ⅛ tsp sea salt (more or less to taste)
  • ⅛ tsp freshly cracked black pepper (more or less to taste)
  • neutral oil (approximately 2-4 tablespoons as needed)
  • chopped fresh parsley
  • lemon wedges

Instructions

  1. In a bowl, mix mayonnaise, Greek yogurt, lemon juice, garlic, and parsley for the sauce. Set aside.
  2. In another bowl, combine flaked salmon, eggs, onion, almond flour, parsley, garlic, lemon juice, salt, and pepper. Mix well.
  3. Shape into patties about ¾ inch thick.
  4. Heat oil in a frying pan over medium heat and cook patties for 4-5 minutes on each side until golden brown.
  5. Serve warm with the creamy sauce drizzled on top or on the side.
