- ½ cup softened butter
- ¼ cup powdered sugar
- 1 cup flour
- 1 pinch salt
- 2 large eggs
- 1 cup granulated sugar
- ½ teaspoon baking powder
- 3 tablespoons lemon juice
- Zest of ½–1 lemon
Instructions
- Preheat your oven to 350°F (180°C) and prepare an 8×8 inch cake pan by greasing it or lining it with parchment paper.
- In a mixing bowl, combine ½ cup softened butter and ¼ cup powdered sugar. Add in 1 cup flour and a pinch of salt until crumbly, then press into the bottom of the prepared pan.
- Bake the base for about 15 minutes until lightly golden.
- While the base bakes, whisk together 2 large eggs and 1 cup granulated sugar in another bowl. Mix in ½ teaspoon baking powder, 3 tablespoons lemon juice, the zest of half to one lemon, and another pinch of salt until smooth.
- Pour the lemon filling over the baked shortbread base and return to the oven for an additional 25-30 minutes or until set.
