  • 2 cups whole milk
  • 1/2 cup sugar (plus extra for whipped cream)
  • 5 tbsp cornstarch
  • 1 cup flaked sweetened coconut
  • 2 cups whipping cream
  • 1 tbsp coconut extract

Instructions

  1. Bake the white cake according to package instructions or your favorite recipe. Allow it to cool completely before cutting into cubes.
  2. In a saucepan, combine 2 cups of whole milk, 1/2 cup sugar, cornstarch, and a pinch of salt. Cook over medium heat while whisking until thickened.
  3. Remove from heat and stir in butter, flaked coconut, and vanilla extract. Cool slightly before thinning with an additional 1/2 cup milk.
  4. Whip the cream until soft peaks form; gradually add in sugar and coconut extract until stiff peaks form.
  5. In a trifle dish, layer cake cubes, pudding mixture, and whipped cream. Repeat layers and finish with more whipped cream and flaked coconut on top.
  6. Refrigerate for at least one hour before serving.
