  • 1 lb beef sirloin, thinly sliced
  • 1 cup jasmine or basmati rice
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce
  • 2 tablespoons cooking oil

Instructions

  1. Rinse rice under cold water until clear. Combine with two cups of water in a pot, bring to a boil, then simmer covered for 15 minutes until absorbed.
  2. While rice cooks, slice the beef against the grain into thin strips.
  3. Heat oil in a skillet over medium-high heat. Cook beef until browned (3-4 minutes), then add garlic and bell peppers. Stir-fry until veggies are tender (3-5 minutes).
  4. Add soy sauce and oyster sauce; mix well and cook for another minute.
  5. Serve over rice with additional soy sauce if desired.
