  • 4 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 red onion, chopped
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and oregano.
  2. Cook chicken for 5–7 minutes per side until golden brown and cooked through. Remove from skillet.
  3. Sauté garlic, cherry tomatoes, zucchini, bell pepper, and red onion in the same skillet for about 5 minutes until tender.
  4. Stir in orzo pasta and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 10–12 minutes until orzo is cooked.
  5. Return chicken to the skillet. Drizzle with balsamic vinegar and cook for an additional 2–3 minutes.
  6. Garnish with fresh basil before serving.
