- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup cherry tomatoes, halved
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 red onion, chopped
- 3 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and oregano.
- Cook chicken for 5–7 minutes per side until golden brown and cooked through. Remove from skillet.
- Sauté garlic, cherry tomatoes, zucchini, bell pepper, and red onion in the same skillet for about 5 minutes until tender.
- Stir in orzo pasta and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 10–12 minutes until orzo is cooked.
- Return chicken to the skillet. Drizzle with balsamic vinegar and cook for an additional 2–3 minutes.
- Garnish with fresh basil before serving.
